Chef April's Appetizer Class

We have lots of great photos from this class so I will be space with captions and let you enjoy!

The first appetizer was Vietnamese Melon Skewers. Quick and refreshing; can't wait for our local melons to be ready and try these again. Note the cilantro sprinkled over top before you serve.

Look at the fresh ingredients that are going into the Asian Italian Rice Paper wraps. Everybody got into the act on this one.

Here is the finished product sliced open - delicious!

An impressive wrap. These get served fresh within an hour of preparation.

Onto the California Spring Roll. These are authentic in that Chef April grew up on the West Coast.

Yummy!

We had a couple of assistants that fed the class!

Folks asked for seconds on this dish!

Onto the Spanakopita. Puff pastry is so versatile. This was made with a spinach fill and a bonus cucumber dip.

Look at that presentation.

Another very enjoyable class. There was a great deal of hands-on which left our students amply prepared to make these at home. Thanks Chef April! We'll need to offer a similar class this fall in time for the holiday season.

Vincenzo Strikes Again with a Private Class for Joyce

Suffice it to say that a good time was had by all during Joyce's Mediterranean Birthday Bash.

Here is the Chef playing with his food again! Fresh pasta is being run through the pasta machine.

A little hands-on training after the raviolis are ready for stuffing.

Stuffing is complete, slicing with te specialty tools is next.

Vincenzo explains how versatile a ravioli is and what other options you have for stuffing.

The asparagus gets a special treatment; spears are bound with butcher's twine, and then egged, breaded and fried.

Here the raviolis are skillet fried after being boiled. We will get the water hotter for the next round!
The asparagus in the Scanpan.
Can't forget the dessert.

You can find these same wonderful dishes prepared fresh daily over at Vincenzo's in Calvert county on Dowell Rd. Another wonderful evening and a birthday to remember. Happy Birthday Joyce!
